Nutrition science is shifting from generalized dietary advice toward personalized, function-driven interventions that account for microbiome variation, metabolism, and cognitive performance. This approach addresses rising chronic conditions like type 2 diabetes by tailoring food to individual biology. Faculty can accelerate this shift by building AI-based dietary algorithms, conducting randomized trials of personalized plans, and engineering foods enriched with functional compounds such as prebiotics, polyphenols, or cognition-support nutrients.
